COOL, CRISP AND CONTEMPORARY, THE TIDES RESTURANT OPENS WITHIN NEW 4STAR HOTEL IN CHRISTCHURCH
The Captains Club Hotel, a brand new 4star plus 29room property, opens its doors on the 11 th November 2006, in the idyllic priory town of Christchurch. Located on the banks of the picturesque River Stour, this £8m privately owned, independently run hotel will boast a state of the art spa and luxurious hotel motor yacht,available for charters.
The Tides Restaurant is the ‘pearl in oyster’ of Captains Club Hotel and it aims to put Christchurch firmly of the UK gastro map. As with the entire hotel, the design and ambiance of this river facing restaurant complements its locale, blending a contemporary maritime theme with cutting edge innovation and always a warm, attentive service.
Andrew Gault, the Head Chef, comes to Christchurch from the 7star Burj Al Arab Hotel in Dubai. He has also held positions at St Andrews Bay Golf Resort, Gleneagles Hotel and the Michelin starred Royal Parc Hotel in Evian, France. Due to his passion, Andrew has evolved as a key player in the development of this ‘forward thinking’ hotel and is committed to providing an innovative, wholesome menu, sourcing the very best local ingredients.
Andrews aim will offer Christchurch something very different. Dishes will carry his
own unique slant inspired
by his formidable experience on
contemporary and
inventive, cuisine. Says Andrew ‘The menu will reflect the feel of the hotel,
uncomplicated, fresh, innovative and ultimately satisfying. I have a strong desire to
surprise diners with dishes that have been inspired by fusing Asian and European
styles. We are mindful of our discerning clientele and know that it is vital that the
dishes we serve reach their high expectations.’
Andrew has been busy sourcing the best local suppliers and is now looking forward to working in England for the first time in his 16 year career. His top tip is ‘use only the freshest ingredients and always keep an eye on the finished product’.
