Cocktails

Our specialized team of mixologists have created a list of a few of our favorite cocktails, although we haven’t included the classics there is a list at the back and we would love to tell you all about them.
We are always up for a challenge so let us know what you like and we’ll see what we can do…happy drinking.

Rum

Rum is a distilled beverage made from sugarcane bi-products by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak and other casks. While there are many countries that produce rum, the majority occurs in and around the Caribbean and along the Demerara River in South America.

Hemmingway Daiquiri         

Earnest Hemmingway’s version of the daiquiri with a CCH twist, a mix of vanilla infused Pampero Especial rum, pink grapefruit juice and maraschino syrup.

Mai Thai –tini

Our twist on Trader Vic’s Legendary drink, made with Pampero Blanco and Especial rum and Goslings dark rum, Cointreau, Apricot liqueur, Angostura bitters, lime juice and an Orgeat foam.*

Fit for a king

This cocktail is based around an old fashioned created by stirring possibly one of the best rums in the world, Ron Zaccapa 23, with a split vanilla pod, orange peel and chocolate bitters. A great drink that was created and entered for the World Class competition.

Zombie 

Not for the faint hearted this drink is a fantastic variation of Don the Beachcomber’s classic cocktail.
Ours is made with Pampero Blanco and Especial rum and Goslings dark rum, pineapple, lime and lemon juice, homemade pomegranate syrup, Angostura bitters and topped with flaming Wray and Nephew over proof rum. The only way to describe this drink “Grandfather of all pixies, and great uncle to the gremlins” David Embury.

Thai Caipirissima

Using our own Pampero chili and ginger rum infusion, with elements of lime, homemade demerara syrup and Angostura bitters, makes this drink refreshing, with a slight spice.

Gin

Gin is a spirit, made from the distillation of white grain spirit and juniper berries, which provide its distinctive flavour. The taste of ordinary gin is very dry, and as such it is frequently mixed with other beverages. It should not be confused with sloe gin, a sweet liqueur traditionally made from sloes infused in gin.

Perfect 10 Martini

Considered one of the worlds best gins, kept simple in a martini.
Tanqueray No. 10 gin, stirred with dry vermouth & grapefruit bitters.

Bramble

One of our favourites; a great drink that couldn’t be left out of this menu. Tanqueray gin, lemon juice, crushed blackberries and crème de mure. Garnished with lemon zest and fresh juicy blackberries.

Afternoon tea in a lavender meadow

This long, fresh, Mojito inspired drink is made with a base of a lavender infused Tanqueray gin, refreshing crushed cucumber, zingy lime juice and cooling mint, combined with homemade Mighty Leaf earl grey syrup.

Old Tom Collins

We’ve kept this one simple and stuck to the classic. Starting with the slightly sweeter Haymans Old Tom gin, lemon and lime juice, sugar and soda.
To be a bit different, please ask for the seasonal variation.

Twisted Negroni

A twist on an old school cocktail, comprising of Tanqueray 10 gin, Antica Formula sweet vermouth, Aperol, Grapefruit bitters and juice. This bitter, sweet drink is coming back and this twist brings a whole new light to it!
Fancy something slightly sweeter? Try a white Negroni.

Clover club

This cocktail dates back to at least 1911 in a Philadelphia men’s club of the same name. Made with a base of Tanqueray gin shaken dry with homemade raspberry syrup, dry vermouth, lemon juice and egg white.* (optional but recommended)

Vodka

Vodka is typically colourless liquor, usually distilled from fermented grain (a type of potatoes) but also from other raw materials. The word is a diminutive of the Slavic word "voda" for "water." Except for various types of flavourings, vodka consists of water and alcohol (ethanol). Vodka usually has an alcohol content ranging from 35% to 70% by volume

Mamma’s Apple Pie

The name says it all, made by mixing Zubrowka Bison Grass vodka, pressed cloudy apple juice, our homemade cinnamon syrup and Rhubarb Bitters.

Razzle Martini

A drink based around a raspberry martini, our recipe uses Ketel One vodka, crushed raspberries, Chambord, fresh mint, lime juice and maple syrup giving this drink a velvet like texture.

Blueberry Fjords

An interesting blend of Belvedere Black Raspberry vodka, crushed blueberries, lime juice, a few drips of Grenadine and vanilla syrup.

Lost in translation

Belvedere Grapefruit vodka based short aperitif using lychee juice, apricot liqueur and orange bitters; this drink is packed with flavour and refreshing qualities.

Chase martini

Voted vodka of 2010 and it’s English! A potato vodka from Herefordshire, Chase vodka kept simple, shaken or stirred with your choice of dry vermouth.

Whisky

Most of these cocktails have a base sprit of bourbon:

Bourbon is an American whiskey, a type of distilled spirit, made primarily from corn and matured in charred oak barrels. Named for Bourbon County, Kentucky. It has been produced since the 18th century. While it can be made anywhere in the United States, it is strongly associated with the state of Kentucky.

Reserved for you

Created as an introduction to bourbon, so it’s easy to drink with a smooth texture. Made with Woodford Reserve bourbon, strawberry jam, crème de fraise, Mozart dark and egg white*.

Boston Flip

A classic drink using Buffalo Trace bourbon, Madeira and a whole egg* gives this drink an almost milkshake like texture with a nice healthy hit of bourbon.

Julep Smash

Fruity version of a classic mint julep. Made with Buffalo Trace bourbon, mint and sugar smashed together with either: white peach, strawberry, or raspberry.
Try our Julep shot, Buffalo Trace infused with mint and sugar.

One Sour Italian

A little variation on a bourbon sour, made with Makers Mark bourbon, homemade ginger syrup, apricot liqueur, lime juice & egg white.*(optional but recommended)

Flying Buffalo

This cocktail is a mixture of classics, flying Scotsman and old fashioned. Buffalo Trace bourbon, Cointreau, sweet vermouth, sugar, orange zest & bitters.

Makers ‘n’ Maple

A cocktail that is a bit too easy to drink with a combination of Makers Mark bourbon, homemade cranberry jam, lemon juice, maple syrup and orange bitters.

Tequila

Tequila is a distilled alcoholic beverage made primarily in the area surrounding Tequila, a town in the western Mexican state of Jalisco, 65 km from Guadalajara. It is made from the blue agave tequilana weber plant (also called Maguey by the local people), part of lily family, which is native to Mexico. Most common tequilas are 38% to 40% alcohol (76 to 80 proof)

A great version of a margarita with our little twists using Jose Ceurvo Tradicional tequila, melon liqueur, lime juice, agave & maraschino syrup, served strong and straight up

Harbour Sunrise

A great, refreshing drink to be drank sitting on the terrace watching the world go by. This cocktail is made by shaking Jose Ceurvo Tradicional tequila with pink grapefruit juice, pomegranate & agave syrup, layered with an orange foam.*

Sangrita

The name loosely translates to “little bloody one” and is different take on a Bloody Mary. It consists of a large shot of Jose Ceurvo Tradicional tequila and chased with spicy tomato juice (spiced with our secret blend of spices).

One of our own concoctions with a great infusion of plum & fig Jose Ceurvo Tradicional tequila, mixed with cinnamon syrup, apple juice, lemon juice and topped with a vanilla foam.*

Orange Blazer

A warming drink for those cold winter months. Made simply with Hennessey Cognac, Grand Marnier, orange zest and set ablaze to take the edge off the Cognac.
