Rum is a distilled beverage made from sugarcane bi-products by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak and other casks. While there are many countries that produce rum, the majority occurs in and around the Caribbean and along the Demerara River in South America.
Earnest Hemmingway’s version of the daiquiri with a CCH twist, a mix of vanilla infused Pampero Especial rum, pink grapefruit juice and maraschino syrup.

This cocktail is based around an old fashioned created by stirring possibly one of the best rums in the world, Ron Zaccapa 23, with a split vanilla pod, orange peel and chocolate bitters. A great drink that was created and entered for the World Class competition.

Not for the faint hearted this drink is a fantastic variation of Don the Beachcomber’s classic cocktail.
Ours is made with Pampero Blanco and Especial rum and Goslings dark rum, pineapple, lime and lemon juice, homemade pomegranate syrup, Angostura bitters and topped with flaming Wray and Nephew over proof rum. The only way to describe this drink “Grandfather of all pixies, and great uncle to the gremlins” David Embury.

Gin is a spirit, made from the distillation of white grain spirit and juniper berries, which provide its distinctive flavour. The taste of ordinary gin is very dry, and as such it is frequently mixed with other beverages. It should not be confused with sloe gin, a sweet liqueur traditionally made from sloes infused in gin.

Tequila is a distilled alcoholic beverage made primarily in the area surrounding Tequila, a town in the western Mexican state of Jalisco, 65 km from Guadalajara. It is made from the blue agave tequilana weber plant (also called Maguey by the local people), part of lily family, which is native to Mexico. Most common tequilas are 38% to 40% alcohol (76 to 80 proof)
